easy enchilladas

1 pk large flour tortillas
2 cans enchillada sause
1 jar salsa
1 1/2 lb hamberger meat
1 can chilli
1 pk of cheddar of mexican shredded cheese

brown hamburger meat. drain. add chilli, 1 can of enchillada sauce, and 1/2 jar of salsa. Mix well. does not need to be heated. grease baking pan with pam. spoon mixture into tortilla shells roll up and place in pan. mix the other jar of enchillada sauce and the remaining salsa. pour over the enchilladas. pour cheese on top. Bake at 350 until the cheese has melted.

Fresh Apple Cake

This is a very simple cake that does not require very much to make.

2 cups of fresh apples chopped and peeled
1 cup of sugar
1 cup of self rising flour
1 egg
1 tsp. cinnamon

Mix all ingredients. It will be hard to mix up, but trust me, you do not need to add any butter, oil, or water. Spray a 9 inch square pan with non stick cooking spray. Pour mixture into pan and bake on 325 for 35 minutes or until top of cake is browned. It will be soft.

Let me know what you think, this is one of the most moist cakes I have ever made.

Creamy Vegetable Soup

This one is a huge hit with my family! The recipe can be doubled if needed.

1 can green beans
1 can peas
1 can corn
1 can carrots
3 cans chicken broth
1 tsp. onion powder
1 tbsp. garlic powder
1 small container of heavy whipping cream

Open vegetables and blend them finely in the blender. Mix vegetables, garlic powder, onion powder, and chicken broth in a pot bring to boil. Reduce heat and simmer for about 15 mins. Add whipping cream. Simmer for about 30 mins. Remove from heat and serve. This is a soup that you can drink from a cup. I serve it in a bowl with rolls.

bbq sauce

This is a bbq sauce that I invented today. I needed some sauce for some frozen meat balls I had (sometimes I do cheat, but that is OK). I had some basic things in the fridge, but nothing that any of the recipes I found online called for. It is a very simple recipe as you will see and has ingredients that most of us have in our pantry. Unfortunately,I did not use a measuring spoon so I am going to give approximate measurements. You may have to add a little bit more if you think it needs it.

1 green onion
1 tbs. butter
2 tbs. garlic powder
1/2 tsp. ginger
2 cups ketchup
1/2 cup of water
2 tbs. mustard
1 tbs. sugar
2 tbs. molasses
1 tbs. honey
1/2 tsp. onion powder
1/2 tsp celery salt
pepper to taste

chop up onion and saute in butter, add 1 tbs of garlic and half of the ginger while sauteing. When onion is tender, add remaining ingredients and simmer for about ten minute stirring frequently. Va la! You are finished!
